Carol's Super Slaw Recipe!



Slaw Ingredients:
1 bag of Edamame steamed frozen beans (find them in the freezer section)
1 Serving of sunflower seeds (read the bag to determine 1 serving)
1 serving of  dried cranberries - no sugar added (like Craisins)
1 bunch of cauliflower, finely chopped
1 bunch of broccoli, finely chopped
1 cup of fresh blueberries
1 cup of raw carrots, finely chopped
1 bunch of celery finely chopped
Optional - 1 cup of finely chopped lettuce, spinach leaves, or spring mix
Preparation:
Microwave the Edamame according to directions on the bag, let them cool to the touch, then remove the beans from the pods. Discard the pods
Mix all ingredients well in a large bowl
Divide the contents up into at least 10 ziplock sandwich bags
Calories - approximately 100 per bag
Serving Suggestions:
Eat the slaw as is for an afternoon snack, or as a side with grilled chicken. Also, you may like to use Wishbone Spray Balsamic Dressing - 10 sprays on the baggie of slaw adds only 10 calories and gives it more flavor!
